Charcuterie 101


Sometimes a charcuterie board is the only dinner you need!

While the arrangement may be simple, these foods are glorious!

Lifestyle changes are easy to keep up with when they're fun, convenient, and sustainable.

It sure helps when they're pretty too!

Also- I've learned that dates and cheese... followed by a Turkish fig... are a favorite snack combo!

Umm... yum!

Pair that yumminess with some summer sausage, prosciutto, cornichons, olives, and even more cheese... you're all set!

Life Changing Potato Salad


Who doesn't love a good potato salad? 

And a good potato salad could consist of so many different things and come in so many ways!

Creamy. Mustardy. Sweet. Spicy. Smoky. Cold. Warm. 

Endless possibilities!


My husband and I have perfected a recipe... biggest secret? Bourbon mustard!

It's truly life changing. 

My husband, foodie at @mytattedtake, knows good food... and he can sure make it, too!

I think potato salad is my favorite summer dish. When the grill gets fired up and I smell that smoky fragrance... potato salad just walks in the door of my brain, and I have to make it.

I don't measure it all the same every time, but I'll list the ingredients below. Have fun with them! Make it your own. 

7-8 golden potatoes
Mustard
Mayo
Sweet Relish
Hard Boiled Eggs
Maple Bacon
Green Onions
Bourbon Mustard
Salt
Pepper
Garlic Powder
Dill
Lemon Juice


When you use golden potatoes, you don't even have to peel them. SCORE!

Cut them into approximately 1 inch cubes and boil them until they're soft -- not mushy. 

Let them cool almost completely, before you begin mixing the other ingredients.

Then, put in a pretty little dish - or not - and serve the crap out of this yumminess!


Elote Chicken Salad


Y'all. This is my new fave. It's so refreshing and different for a spring/summer day. And, it goes without saying, (yet we always say it anyway), so scrumptious!

Simply boil a few cobs of corn, let them cool, and then shave the kernels into a bowl. 

Add some shredded chicken, too. (However much you'd like; there's really no wrong or right measurement here.)

Throw in about 2-4 tbsp of mayo. (This all depends on how much corn and chicken you've started with... 4 cobs of corn and 1 cup of chicken usually takes 2.5 - 3 large tbsp.)

Don't forget to include about 1/4 cup of sour cream.

Top with 1/2 cup COTIJA cheese and the juice of 2 large limes.

Here's the kicker -- sprinkle a generous amount of Tajin Clasico lime seasoning over the entire mixture. 
Shall I say, GAME. CHANGER? Yes. Yes, I shall.


Mix everything well. 

Plate it all pretty and add a couple leaves of cilantro if your little heart so desires. 

Guys, this is just delicious. If you like Mexican street corn, you'll be pleased with this quick and easy lunch!

Broccoli, Cauliflower, Chicken Salad




This recipe is so scrumptious!

Healthy, too.

3/4 broccoli crown, chopped
1 cauliflower crown, chopped
1 cup boiled, shredded chicken
1-2 bell peppers, chopped
1/4 cup red onion, chopped
1 cup Greek yogurt
3/4 cup Mayo
Zest of 1 lemon
Juice of 1 lemon
Salt, pepper, garlic powder
Crushed red pepper, to taste
1 tsp red wine vinegar

I absolutely love food that tastes light and fresh!





Spicy Broccoli Caulifllower Chicken Salad



New favorite lunch? Maybe!

Simple, satisfying, slightly spicy, so good!


3 1/2 cups shredded, seasoned, boiled chicken
1 1/2 cups chopped broccoli
1 1/2 cups chopped cauliflower
1/2 cup turkey bacon bits
1 cup plain, Greek yogurt
1/2 cup homemade mayo
1/4 cup natural mustard
1/4 cup hot sauce of choice
Juice from 1 lemon
A couple drizzles of honey
2 tsp paprika
1 tbsp crushed red pepper
salt and pepper

Mix it all in a bowl and eat up.

Or... put in some cute little jars to take for lunch.

So fresh and so clean, clean.
